Melody's Ham & Cheese Muffins

Daniel devoured these, and so will your family!
1 egg
1 cup milk
¼ cup oil
2 cups flour
¼ cup sugar
1 tablespoon baking powder
½ teaspoon salt
¼ teaspoon dry mustard
1 ½ cups grated old cheddar cheese
1 cup cubed cooked ham
Beat egg with fork or whisk in a large bowl. Add and mix remaining ingredients. Liberally grease muffin tin and fill about ¾ of each with batter. Bake at 400 F for 20 to 25 minutes.

Bobbie's Chocolate Temptations

So good, especially warm out of the oven! These cookies are easy to make and great to share.
If you have children at home, you'll probably want to double this recipe.
½ cup butter
1 cup sugar
2 eggs
¼ cup milk
1 teaspoon vanilla
2 cups flour
½ cup Dutch process cocoa
2 teaspoons baking powder
½ cup dark chocolate chips (or half dark and half white)
½ cup chopped pecans (optional)
Mix first five ingredients in a large bowl, beating until creamy. Add dry ingredients and chips (and nuts, if using). Mix thoroughly. Drop by teaspoon onto ungreased cookie sheets. Bake at 375 F about 10 minutes, cool on rack.
Options:
For Chocolate Mint Temptations, use mint chocolate chips and 1/2 teaspoon mint flavoring and 1/2 teaspoon vanilla. Omit nuts.
For Black Forest Temptations, substitute slivered almonds for pecans, use 1/2 teaspooon almond flavoring and 1/2 teaspoon vanilla, and add 1/2 cup chopped maraschino or candied cherries. Great for Christmas!

Bobbie's Bodacious Cinnamon Buns

Dissolve in a large bowl:
2 packages yeast and ½ teaspoon sugar in ½ cup warm water.
Add:
1 cup milk scalded and cooled to lukewarm
2 eggs, beaten
1 ½ teaspoons salt
¼ cup butter or margarine
¼ cup sugar
4 - 4 ½ cups flour
Mix well, then turn out onto well-floured board and knead into smooth, elastic dough. (Don’t add too much flour.) Place in greased bowl, cover and put in warm place. Let rise until doubled (about one hour). Punch down, let rest (covered) 5 - 10 minutes.
Roll out into rectangle, spread with butter or margarine, sprinkle with brown sugar (1/2 – 1 cup) and at least 1 teaspoon ground cinnamon. Slice and place into greased pan. Cover and let rise until doubled.
Bake at 375F for about 20 minutes. Cool for 10 minutes, then drizzle Vanilla Glaze over buns.

Melt 3 tablespoons butter in saucepan over low heat. Remove from heat; add 1 cup icing sugar and ¾ teaspoon vanilla. Beat well, drizzle over cinnamon buns.

This is a large recipe, because they’re so good, they’ll disappear quickly. They can also be frozen and reheated for a quick, delicious meal.
Meat mixture:
Brown 2-3 pounds ground beef, add onion flakes (or chopped), garlic, salt, pepper, oregano, cumin to taste. (Sorry, but I never measure spices!)
Add enough ketchup and mustard to moisten mixture.
Dough:
Stir together thoroughly:
6 cups flour
2 Tablespoons baking powder
1 Tablespoon salt
2 cups milk
¾ cup olive oil
I add garlic powder, Cajun spice, and Italian seasoning
Knead a few times to completely mix, then roll out to about ½”. Spread a thin layer of mayo, leaving one edge uncovered. Spread meat mixture over the mayo, also leaving one edge bare. Carefully roll up from opposite side of bare strip and cut into 1” slices. Place on greased (I use spray) baking sheet. Bake at 425 F for about 20 minutes.
